I decided to try and use up some items I have in my pantry. There was a big bag of egg noodles, so I searched on “Egg noodles” on www.allrecipes.com and found this recipe. It’s really a different version of the egg noodle casserole I’ve made before. And I tweaked this one a little. I used Quorn Grounds instead of the turkey. I used a can of white corn instead of frozen. I also added 2 big handfuls of shredded sharp cheddar cheese, and 1 handful of shredded mozzarella. Oh, and when I was heating up the Quorn, I threw in about 1/2 cup of diced onions that I had leftover from a cookout this weekend. I really think it’s hard to mess up a dish using egg noodles! Everything I’ve used them in I’ve improvised, and it still turns out great! This is a great dish to really use up some stuff in your fridge. We enjoyed this with some garlic bread and a green salad.
