Buttermilk Pancakes

I am constantly searching for that one awesome pancake recipe, and I have to say, I think my search has ended! I had my college roommate visiting me from out of town last week (hence the no posting), and I wanted to make her and her son pancakes. I had bought buttermilk just for this occasion, and searched online for something that got good reviews. I found this one on http://www.allrecipes.com, and it sounded like it fit the bill. I took one reviewer’s advice and added a little extra buttermilk and a dash of vanilla. These pancakes are so flavorful and moist! If I didn’t have other people around I would have eaten about 20 of them! I make my pancakes with a 1/4 cup scoop, so they are a little larger than silver dollar size, and this recipe makes A LOT. I think next time I will halve everything. I do believe these are the moistest (is that a word?) pancakes I’ve ever had. SO GOOD.

Buttermilk Pancakes

Ingredients:

* 3 cups all-purpose flour
* 3 tablespoons white sugar
* 3 teaspoons baking powder
* 1 1/2 teaspoons baking soda
* 3/4 teaspoon salt
* 3 cups buttermilk
* 1/2 cup milk
* 3 eggs
* 1/3 cup butter, melted

Directions:

1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. In a separate bowl, beat together buttermilk, milk, eggs and melted butter. Keep the two mixtures separate until you are ready to cook.
2. Heat a lightly oiled griddle or frying pan over medium high heat. You can flick water across the surface and if it beads up and sizzles, it’s ready!
3. Pour the wet mixture into the dry mixture, using a wooden spoon or fork to blend. Stir until it’s just blended together. Do not over stir! Pour or scoop the batter onto the griddle, using approximately 1/2 cup for each pancake. Brown on both sides and serve hot.
