Bowtie Pasta with Vodka Sauce & “Chicken”

Here’s another recipe from the Wegmans Menu magazine. Although I really tweaked it, so I am not even sure it qualifies as the same recipe. I used Morningstar Farms Chik’n Strips in place of the real chicken, so I didn’t need any of the oil or butter. Also, the particular sauce that the recipe calls for (which was Wegmans Italian Classics Vodka Blush Sauce) had meat in it, so I had to go to plan B (another Vodka sauce). This was ok. Nothing special about it.

Bowtie Pasta with Vodka Sauce & “Chicken”
(Wegmans Menu magazine)

Ingredients:

1 pkg (1 pound) farfalle
24 ounces Vodka pasta sauce
1 bag Morningstar Farms Chik’n Strips (in place of 1 pound marinated chicken breast cutlets)
1 tbsp Wegmans Basting Oil (I omitted)
1 tbsp olive oil (I omitted)
1 tsp butter (I omitted)
4 tsp shredded Parmigiano=Reggiano cheese, divided

Directions:

1. Simmer sauce on low in small saucepan, stirring occasionally.
2. Heat olive oil in large pan on medium-high, until oil faintly smokes; add chicken.
3. Add basting oil and butter to pan; swirl. Baste chicken with spoon, 1-3 minutes. Transfer to clean platter.
4. Toss pasta with warm sauce. Divide evenly on 4 plates; top with chicken. Spring each serving with 1 tsp cheese.
