Garlic Red Potatoes

I decided that I wanted to have one of my favorite meals last night, which consists of Faux-Crab cakes, slaw, and some kind of potato. Usually the potato ends up being french fries or tater tots. We bought a little bag of red potatoes at the local farmers market this past weekend, so I decided to see what I could do with them. This recipe is very easy, and I actually didn’t measure anything, but just kind of eyeballed it. The potatoes turned out just about perfect! I could have even left them in the oven a little longer to brown some more, but was too hungry. 😉 What a good summer meal.

Garlic Red Potatoes


2 pounds red potatoes, quartered
1/4 cup butter, melted
2 teaspoons minced garlic
1 teaspoon salt
1 lemon, juiced
1 tablespoon grated Parmesan cheese

1. Preheat oven to 350 degrees F (175 degrees C).
2. Place potatoes in an 8×8 inch baking dish.
3. In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
4. Bake, covered, in preheated oven for 30 minutes. Uncover and bake an additional 10 minutes, or until golden brown
