First of all, Happy Memorial Day! We took a week off and went to Key West! We had a great time. This is a meal I made the night before we left for our vacation. I got the recipe from another one of those booklets I’ve talked about before, that come in each issue of the Food Network magazine. They give you a tiny little book with 50 recipes for various things- this recipe is from the “50 Burgers” booklet. They call this one the “Veggie” burger, but I think it is better named a “Caprese Burger”, so that’s what I am calling it. This is recipe #50, for those of you who have the booklet. We all thought this was really good. But I mean really, how can you go wrong with fresh mozzarella cheese?? I served these with some onion rings.

veggie burgers (I used Boca vegan burgers)
Fry a store-bought veggie burger; top with mozzarella in the last minute of cooking (cover to melt). Serve on a roll with basil, tomato, salt, pepper, and olive oil.
