Gardein Chik’n Piccatta

Have you tried a Gardein product yet? I first tried them several years ago, and I wasn’t too impressed, but I have given them a second chance. I don’t know if they have changed their recipe or what, or if I am just making better stuff with them, but these were great! I saw them at Target, and looked up this recipe on their website. I served these with some mashed potatoes and roasted asparagus. These were very flavorful, and that sauce! That sauce was SO good. It was also good on the mashed potatoes and the asparagus! I will make this one again, for sure.

Gardein™ Chick’n Piccatta


4 gardein™ chick’n scallopini
2/3 cup unbleached flour
salt and pepper,to taste
2-3 tbsp. canola oil
1 garlic clove, minced
2 finely minced shallots 2 tbsp olive oil .2 tbsp capers, drained 1 cup dry white wine
½ cup vegetable stock
2 tbsp. earth balance (cold-pressed non-hydrogenated margarine)
1 tbsp fresh lemon juice
2 tbsp freshly chopped parsley


Combine the flour, salt, and pepper and dredge the gardein™, coating completely. heat the canola oil in a large pan. Brown the gardein™ on both sides. Remove from the pan and set aside. Lower the heat and sauté the garlic and shallots in the olive oil for 3 minutes, taking care not to burn the garlic. Add the capers and sauté for 1 minute. Add the white wine and reduce by half. Add the vegetable stock and reduce by half. Return the gardein™ to the pan and cook for 5 to 10 minutes. Stir in the earth balance, lemon juice, and parsley. Serve immediately.
