Shitakes and Grits

Have you ever had grits? Us folks in the South sure do love them. Yee haw! And they are not just for breakfast! You can make them savory (hello, shrimp and grits), and that’s what this recipe calls for. So this calls for 1 tsp of pepper, and as soon as I added it I knew it had to be wrong. My grits went from white to very gray instantly. I hoped that with the added almond milk it would tame them down some, but nope, they were too spicy for me. And you know what? They were too spicy for Toby! That means that these were some HOT grits! I think the 1 tsp must be a typo. I wrote the gal who runs Please Pass the Tofu about this, so hopefully she will respond. This would have been so awesome had the grits not been so peppery, so I quickly toasted some bread and we ate the mushrooms over toast. And that was good. I still am keeping this recipe in my little binder of “future meals” because I know it has potential.

Shitakes and Grits

Ingredients:

2 cups water
1 tsp salt
1 tsp pepper
1 cup quick-cooking grits
1 cup unsweetened almond milk

olive oil cooking spray
8 ounces sliced shitake mushrooms
1 pound of another kind of mushroom (I used a gourmet mix)
1 tbsp minced shallot
1 minced garlic clove
1/2 tsp salt
1/2 tsp pepper
1/4 cup vegetable or mushroom stock
1/2 cup red wine
3 tbsp Madeira (I used sherry)

Directions:

In a large saucepan on medium heat, bring to boil 2 cups water, tsp salt, 1 tsp pepper.  Stir in 1 cup quick cooking grits and cook for 20 minutes, occasionally stirring.  Stir in 1 cup unsweetened almond milk, cover and set aside.
Spray olive oil spray in nonstick skillet and saute 8 ounces of sliced shiitake mushrooms and 1 pound of another kind of mushrooms sliced .  Cook till browned.
Add 1 tbsp minced shallot, 1 minced garlic clove, 1/2 tsp salt, 1/2 tsp pepper, saute a minute.Add 1/4 cup vegetable or mushroom stock, 1/2 cup red wine, 3 tbsp Madeira, and reduce till most of the liquid is gone.
Season if necessary.
Serve mushrooms over grits.

    Beautiful picture! Next time, just don’t use any pepper and have everyone pepper the dish to their taste. Sorry that it was not too edible. Emeril must love pepper! Do try the grits again definitely! I have never had such wonderful creamy grits.

    Cool~ I kind of like the way you put everything together. I agree that perhaps you should let each person to add pepper according to their own tastes.
