Ok, here’s the 3rd recipe I’ve tried from Please Pass the Tofu and I think this one is my favorite so far! The recipe calls for 12 ounces of fake meat, but I just used 1 bag of Morningstar Farms Chick’n Strips (they are 8 ounces). I left out the jalapeno, and I used 2 cans of black beans (didn’t even measure them, so I don’t know if that was 2 cups or not). We love black beans in this household! I sauteed the fake meat-onion-pepper mixture a little bit longer than 6 minutes, because Toby doesn’t like crunchy red pepper. This makes A LOT of filling! I found low-point tortillas at Wal-Mart (I have looked all over). I warmed up each tortilla in a pan before filling it with the, well, filling. I had some reduced-fat cheddar on hand, and I sprinkled a tiny little bit on top before rolling the tortilla. These were REALLY GOOD! It’s mostly veggies, so I felt really healthy eating it! And the filling by itself is good, too!
Super Fajita Swiss Chard Burritos
In a nonstick skilled sprayed with oil spray, saute these ingredients:
12 oz. faux meat strips (I used Morningstar Meal Starters)
1 sliced red pepper
1/2 sliced red onion
1 seeded and minced jalapeno (I omitted)
Saute about 6 minutes till softened.
1/4 tsp salt
1/8 tsp cumin
1/8 tsp chili powder
1/8 tsp black pepper
2 cups black beans (I used 2 cans)
2 cups chopped Swiss chard
Saute till chard is wilted.
Serve with your favorite toppings and your favorite tortilla (add in the additional points).
