Avocado Dressing

This dressing basically tasted like a jazzed up guacamole. I didn’t like it on lettuce, but on a tortilla chip, it was great! Not a good dressing. It was really thick, too.

Avocado Dressing
(Forks Over Knives, Leanne Campbell Disla)

serves 8


2 garlic cloves, minced
3/4 cup soft avocado
1/4 cup white wine
2 tbsp lime juice
1 tsp Dijon mustard
1/4 tsp sea salt
1/4 tsp black pepper


Put all the ingredients in the bowl of a food processor and pulse until well combined. Refrigerate overnight to blend the flavors.

    This was great as a salad dressing on shredded cabbage as a side to black bean burgers. I didn’t have white wine or white wine vinegar so used only 2 Tbl of golden balsamic vinegar instead. It is too thick for delicate greens but perfect with cabbage!
