Broiled New Potato Puffs

I served these as a side dish to the open-faced sandwiches we had the other night, and let me tell you…these were awful. No taste, and they were barely cooked. Blech. I will take my crash hot potatoes any day.

Broiled New Potato Puffs
(Forks Over Knives, Ann Crile Esselstyn)

serves 2-4

Ingredients:

10 small red potatoes (2-3″ long), sliced into halves or thirds
1/4 cup vegetable broth
1 tsp rosemary
1 tsp lemon pepper

Directions:

Set oven to broil. Put cut potatoes into a bowl and sprinkle with broth, rosemary, and lemon pepper. Arrange the potatoes in a single layer on a baking sheet and put into the oven, about 8 inches below the broiler. Cook for 15 min. Keep peeking to make sure they don’t burn. The will puff up and the tops will brown. It is not necessary to flip them over.
