Tempeh Tacos

I bought a copy of Veg News the other day, and it mentioned that there was a new vegan cooking show on TV! It’s called Vegan Mashup, and I found it on my local PBS station. This is one of the recipes they made, and it was so good! This marinade is so good! And so easy! I made my tempeh tacos with the tempeh, some vegan Cheddar cheese, some shredded purple cabbage, and some guacamole.

Tempeh Tacos

Ingredients:

8 ounces tempeh, cubed
2 tbsp olive oil

marinade:

1.5 cups vegetable broth
3 cloves minced garlic
1.5 tsp chili powder
1/2 tsp paprika
3 tbsp tomato paste
3 tbsp soy sauce
dash of liquid smoke

Directions:

In a frying pan, brown tempeh in oil. Add marinade and simmer for 6-10 minutes. Warm tortillas in a pan (about 30 seconds each side). Serve with your favorite taco toppings (shredded green cabbage or lettuce, guacamole, tomato, etc.)
