Wintery Vegetable Soup

Happy New Year! Did you make any resolutions? We decided to eat better, and what better way to do that than to add more vegan meals to our diet? We eat out about 3x a week (Friday-Sunday night), so we decided to balance that out by eating mostly vegan dinners the other nights! I am always looking for vegan blogs online,  and I found this recipe on a really cute blog. This soup was really fast and simple to make. I didn’t think my family would like it because it’s so simple, but Toby and Liam both had 2 bowls full! This is the kind of soup that would help you get over a cold, I think. 🙂

Wintery Vegetable Soup

Serves 4


1 tbsp olive oil
1 yellow onion, diced
3 cloves garlic, minced
2 large carrots, diced
6 cups vegetable broth
1 head of cauliflower, cut into small chunks
2 tbsp fresh tarragon, chopped (I used dried)
3-4 kale leaves, torn into small pieces


Add olive oil to a large pot. Toss in carrots, onion, and garlic and cook on medium until onions become translucent but not brown. Add broth, cauliflower florets, and tarragon. (I used dried tarragon flakes and it came out fine. Would have been better with fresh though.) Turn heat to high and bring it to a boil for 1 min. Reduce heat to medium-low. Add kale pieces and simmer for 10 minutes. Just make sure your cauliflower is cooked and you’re done!
