Pieless Apples a la Mode

I am getting pretty adventurous with my slow cooker! I tried this dessert the other night. While I did miss the crust (that’s my favorite part!), this was pretty good. Throwing it all in there, I just didn’t think it would amount to anything, but sure enough, after 3.5 hours, voila! I added some nuts to mine at the end (after serving), but next time I will add them to the slow cooker.

Pieless Apples a la Mode
(Fresh from the Vegetarian Slow Cooker, Robin Robertson)

serves 4-6


4 Granny Smith apples, peeled, cored, and thinly sliced
2 tbsp unbleached all-purpose flour
1/2 cup firmly packed light brown sugar or a natural sweetener
1/2 tsp ground cinnamon
1/4 cup golden raisins or sweetened dried cranberries (optional)
1/2 cup rolled (old fashioned) oats
2 tbsp nonhydrogenated margarine, softed
vanilla ice cream, for serving


1. In a large mixing bowl, combine the apples, flour, 1/4 cup of the brown sugar, 1/4 tsp of the cinnamon, and the raisins, if using. Stir to coat, then transfer the mixture to a lightly oiled 3.5-4-qt. slow cooker.

2. In a small mixing bowl, combine the oats, the remaining 1/4 cup brown sugar, 1/4 tsp cinnamon, and the margarine. Sprinkle the oat mixture over the apples. Cover and cook and LOW for 3.5-4 hours.

3. Serve warm, spooned into dessert dishes and topped with a scoop of ice cream.
