Creamy Poppy Seed Coleslaw

Man, was this slaw good! And it wasn’t sweet at all, so Toby really liked it. I made it the day before so it could sit and soak up some flavor.

Creamy Poppy Seed Coleslaw
(Cookin’ Crunk- Eatin’ Vegan in the Dirty South, Bianca Phillips)

served 4-6


3 cups shredded cabbage
1 carrot, peeled and grated
2 tbsp minced red onion
1/2 cup vegan mayo
1 tsp agave nectar
1/2 tsp salt
1/2 tsp poppy seeds


Put the cabbage, carrot, and onion in a large bowl and mix well. Add the vegan mayo, agave nectar, salt, and poppy seeds and stir until the vegetables are evenly coated. Refrigerate until ready to serve.
