Meatballs with Apricot Couscous

Real Simple magazine had a little article last year with different recipes using meatballs. This is the first one I have tried, and it was good! I used Morningstar Farms “meatballs” (only because I can’t find any other brand), and they worked just fine. My kids have never had couscous, so I thought they would love it, but nope, they didn’t. Toby didn’t think he would like this, but he said with each bite, it got better and better. This took no time at all to pull together

Meatballs with Apricot Couscous
(Real Simple, Sept. 2012)

serves 4
time needed: 25 min.

Ingredients:

20 meatballs
1 cup couscous
1/2 cup dried apricots, sliced
1/2 cup sliced almonds
2 scallions, chopped
2 tbsp olive oil
salt and pepper
1/2 cup plain yogurt
lemon wedges

Directions:

Cook the meatballs. Place the couscous and apricots in a bowl, add 1 cup boiling water. Cover and let sit for 5 minutes, then fluff with a fork. Fold in the almonds, scallions, and olive oil. Season with salt and pepper. Serve with the yogurt and lemon wedges.
