Glazed Meatballs

Here’s another recipe from the Real Simple article on different ways to cook with meatballs. I’ve had something similar back in my meat-eating days, but they were prepared with grape jelly. These were so easy, and we all liked them! I was afraid Toby wouldn’t like him, because he doesn’t like his food to be sweet unless it’s dessert. He liked them!

Glazed Meatballs
(Real Simple, Sept. 2012)

Ingredients:

20 meatballs (I used 2 packages Morningstar Farms meatless meatballs)
1 cup currant jelly
1/8 tsp ground allspice
dill (optional)

Directions:

Cook meatballs. Bring the jelly and allspice to a simmer in a large skillet. Add the meatballs, toss to coat, and cook until the mixture is slightly thickened and coats the meatballs, 3-5 minutes. Serve with mashed potatoes and sprinkle with dill.
