Pasta with Spinach & Meatballs

Here’s another way to use those veggie meatballs! This recipe was great! It was fast, easy, and we all liked it! If you can’t use gemelli, use another pasta of your choice.

Pasta with Spinach & Meatballs
(Real Simple, Sept. 2012)

serves 4
time needed: 30 min.


20 meatballs (I used 1 box Morningstar Farms veggie meatballs)
gemelli, 3/4 pound
12 ounces mushrooms, quartered
1 tsp thyme, chopped
5 ounces baby spinach
1/2 cup grated pecorino (I used vegan Parmesan)
salt and pepper


Cook meatballs. Cook pasta, reserving 1/4 cup of the cooking water. Cook the mushrooms and thyme in butter in a large skillet until tender, 8-10 min. Toss with pasta, meatballs, spinach, cheese and the reserved cooking water. Season with salt and pepper.
