Happy Independence Day, America! How about celebrating with some dip? This dip was super-easy and REALLY tasty! I made mine early in the day so that it could sit in the fridge for awhile. This dip only has a hint of lemon flavor, nothing too overpowering.
Lemon Goat-Cheese Dip

1 cup mayonnaise
1 10.5 ounce goat-cheese log, crumbled
2 tbsp olive oil
2 green onions, chopped
1 tbsp fresh lemon juice (about 1/2 lemon)
1 tsp lemon zest (about 1/2 lemon)
salt and freshly ground pepper
pita chips, for serving
In a food processor, combine first 6 ingredients, plus 1/2 tsp salt and 1 tsp pepper; blend until smooth. Transfer to a bowl and season with salt and pepper. Serve with pita chips.
