Olive Dressing

This dressing was so easy to make, but when I first tasted it (right after I made it), I thought, hmm, this is not very good. But then when I had it over lettuce, it was actually really good! We all liked it, and Toby said it was one of the best dressings I’ve made! Ha!

Olive Dressing
(Food Network magazine)


2 tbsp lemon juice
1 tbsp dijon mustard
1 tsp lemon zest
1/2 tsp sugar
salt to taste
1/4 cup olive oil
1/4 vegetable oil
1/4 cup pitted kalamata olives
1 1/2 tsp fresh thyme

Whisk all ingredients except oil together. Gradually whisk in oil.
