Roasted Garlic Dressing

Man, was this dressing good! My 6 year old LOVED it and made me promise to make it once a week. This dressing is very easy to make, but it takes a little time because you have to roast the garlic. Next time I will double the recipe to have some left over!

Roasted Garlic Dressing

1 head garlic
olive oil
3 tbsp grated Parmesan
2 tbsp red wine vinegar
2 tsp Dijon mustard
1/2 tsp kosher salt
pepper to taste
1/3-1/2 cup olive oil


Whisk red wine vinegar, mustard, salt, and pepper together. Gradually add 1/3-1/2 olive oil. Slice the top off 1 head of garlic; drizzle with olive oil, wrap in aluminum foil and roast at 400 degrees F until tender, about 35 minutes. Cool, then squeeze out the cloves. Add the roasted garlic and the Parmesan to the red wine mixture, and blend in a blender.

    Wonderful! I am roasting about 15 heads of garlic right now in my clay cooker. I’ll squeeze it all out and freeze it and will try your gorgeous dressing (doubled!) tomorrow maybe. Thank you!
