This recipe came in one of the little “50 Ways” booklets that comes every month in the Food Network magazine. This one was from “50 Ways to Cook Chicken”. I have to say that this recipe did not wow me. Yes, it was easy, but it was only so-so.

vegetarian “chicken”- (I used Gardein fake chicken strips)
2 tbsp sour cream (I used vegan sour cream)
2 tbsp lime juice
toppings of choice
Warm “chicken” in pan. Mash avocado with sour cream and lime juice; season with salt and cayenne. Spread on tostada shells. Top with the “chicken”, shredded lettuce, more sour cream, and fresh salsa.
