Creamy Vegan Dressing

This recipe came from the little monthly insert that’s in each Food Network Magazine. Each month it is 50 different recipes with a theme. One month it was 50 salad dressings, and I am making my way through them! This one was easy, super-quick, delicious, and bonus, vegan! My 7 year old loved this dressing. My only gripe with this recipe is that it wastes a lot of tofu. I guess I should have several recipes handy that use the soft tofu!

Creamy Vegan Dressing
(Food Network Magazine)


2 tsp Dijon mustard
2 tsp cider vinegar
1 tsp salt
1/2 cup olive oil
1/2 cup soft tofu
1/2 cup mixed chopped herbs, such as chives, parsley, and chervil


Pulse all ingredients except herbs in a blender until smooth. Stir in herbs.
