This recipe is so easy, and it really comes together quickly! I threw my asparagus in the pan with the shallots and green onions (with no oil or butter, then added the egg on top of that). I didn’t measure out my feta, but just sprinkled a good handful on top. I served this with a green salad and some toast. Yum!
Feta, Green Onion, and Asparagus Frittata
(Cooking Light, Sept. 2014)
8 ounces raw asparagus
1/4 cup shallots, thinly sliced
3 tbsp green onions, chopped
2 ounces crumbled feta cheese
2 egg whites
6 large eggs
1/4 tsp kosher salt
1/4 tsp black pepper
1/3 cup 1% milk
1. Preheat broiler to high. Combine the egg whites, other eggs, salt, pepper, and milk; stir with a whisk.
2. Heat a 9″ cast-iron skillet over medium heat.
3. Layer in veggies.
4. Sprinkle with cheese.
5. Carefully pour egg mixture over cheese. Cook over medium heat 5-6 minutes or until eggs are partially set; then broil 5 inches from heat for 2-3 minutes or until browned and almost set.
