The Hot Chick

This is really just a different way to make a “chicken” sandwich, but boy was it good! I left out the hot sauce on mine, but husband said his was really good! My 8 year old said it was a little too spicy for him (even though he likes spicy food!). The mayo + “bacon” bits was a nice touch, too.

The Hot Chick
(Quick and Easy Vegan Comfort Food, Alicia C. Simpson)

makes 4 sandwiches

Ingredients:

4 breaded faux-chicken patties (I used Quorn)
1 cup hot sauce (I used Cholula)
1/3 cup vegan mayonnaise
2 tbsp vegan bacon bits
4 whole wheat or spelt hamburger buns
4 leaves romaine, read lead, green leaf, or bibb lettuce
1 medium Roma tomato, slice thin

Directions:

Preheat the oven to 425 degrees F.
Marinate patties in hot sauce for 10 minutes. Remove the patties from the hot sauce and place them on a baking sheet lined with foil. Bake for 15 minutes, turning them halfway through.
While the patties are baking, stir together the mayonnaise and bacon bits. Toast the hamburger buns. To assemble, spread the mayonnaise mixture on both sides of each hamburger bun. Put the patties, lettuce, and tomato on the sandwiches and close them up.
