So after I had already been to the grocery store and bought the vanilla pudding for this recipe, I REALLY read the recipe and she says she sometimes uses the cheesecake-flavor pudding to make it REALLY taste like cheesecake. Oops! Oh well. But this was really good! It was super good after I just made it (like, straight from the bowl). After it had been sitting in the fridge several hours, it got almost too thick. My 4 year old loved it, my 8 year old ate half of his, and husband liked it. NOTE: I didn’t use a pie plate, but just spooned the cookie crumbs into small glasses and topped with the pudding mixture. Easy recipe!
4 tbsp butter, unsalted
3 cups cookie crumbs (animal cracker, nilla wafer, or other cookie of your choice)
3 tbsp sugar
8 oz cream cheese, softened (I used lite cream cheese)
3 cups heavy cream
½-1 cup 2% milk, divided (I used almond milk)
¾ cup powdered sugar
½ tsp vanilla extract
1 3.4oz pkg vanilla pudding
1. Crush cookies into small crumbs and mix with butter and sugar. Press into a pie plate and set aside.
2. Using a mixer, combine the softened cream cheese, cream, milk, powdered sugar, and vanilla. Beat until smooth. Add in pudding and beat for 2 minutes. Spread into prepared crust, and chill 1 hour, or until set. Top with fresh fruit of your choice.
