Tortellini Caesar Salad

Recipes really don’t get easier than this one. The measurements are in grams, but I just kind of eyeballed it. This was really good! My 8 year old liked it (and had seconds), and I just picked out some tortellini for my 5 year old. I thought this wouldn’t be good the next day (soggy lettuce), but it was actually really good.

Tortellini Caesar Salad

300g tortellini (I used cheese tortellini)
100g lettuce, roughly chopped (I used a mixture of iceberg, escarole, endive and radicchio)
30g vegetarian parmesan-style cheese, shaved
75g Caesar dressing (make sure it’s vegetarian!)
Black pepper


Boil the tortellini according to the instructions on the packet. Fresh tortellini takes just a couple of minutes to cook, so make sure you don’t overcook it – you want it to be slightly al dente. Once cooked, drain the tortellini and give it a rinse under cold water. Set aside to cool fully.
When the tortellini is cool, add it to the remaining ingredients, and mix gently to combine. Serve immediately.
Note: if making this salad in advance, only add the dressing when ready to serve.
