Mozzarella Caprese

I wanted some kind of salad the other night, and I came up with this! It’s super easy to throw together, but it does take a few minutes for the bread to toast and the tomatoes to roast. Kids picked out the bread to eat, but husband and I thought it was great. All ingredients are to taste (the amount is up to you).

Mozzarella Caprese

serves 4


baguette, cut into cubes
olive oil
salt and pepper
cherry tomatoes
basil leaves
balsamic vinegar


Toss cubed bread with a little olive oil (1-2 tbsp) and put on a cookie sheet. Sprinkle on a little salt and pepper and bake at 400 degrees F. until lightly toasted (10-15 minutes). Stir them halfway through. Set aside. Toss cherry tomatoes with a little olive oil (1-2 tbsp) and roast for 20 minutes or so, until they just start to brown. Stir them halfway through. Cut mozzarella into small bites and add to a large bowl. Throw in the bread and tomatoes. Drizzle with a little more olive oil if needed. Add basil leaves and drizzle with balsamic vinegar.
