Wow, was this slaw good! So good that my 9 year old wanted to take it for lunch to camp! This is super easy and you will be glad you made it.
Paige’s Feta Slaw
1 (8.5 ounce) package angel hair cole slaw mix
2-1/2 green onions, chopped
1/3 cup extra virgin olive oil
2 tablespoons distilled white vinegar
2 tablespoons water
1/2 large clove garlic, minced
3/4 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 teaspoon Italian seasoning
1/4 pound feta cheese, crumbled
Toss cabbage and chopped green onions together in a large bowl; set aside.
In a separate bowl, slowly whisk oil into vinegar. Add water, garlic, salt, pepper, and Italian seasoning, and whisk until well-blended. Toss cabbage with dressing and feta cheese. Cover, and refrigerate 15 minutes or longer to allow flavors to develop. Serve chilled.
