“Chicken” Caesar Pasta Salad

Another win for Pinterest! This dish was SO good! My 8 year old said it’s probably the second-best thing I’ve ever made! 🙂 Husband loved it, too! I did add more lettuce than this calls for, and I used a spring mix, not the romaine, because that’s what I had on hand. The only bad thing about this dish is that it doesn’t keep well. That lettuce will be very soggy the next day.

“Chicken” Caesar Pasta Salad

Ingredients:

1 cup mayonnaise (I used vegan mayo)
⅓ cup sour cream
1 large clove garlic, pressed
2 tablespoons lemon juice
2 anchovies, finely minced (I omitted)
1 teaspoon Worcestershire sauce (I used vegetarian Worcestershire)
1 pound penne pasta, cooked until al dente and rinsed with cool water
6 large leaves Romaine lettuce, thinly sliced (I used spring mix and more of it)
1½ cups grape tomatoes
4 green onions. green parts sliced
½ cup finely shredded Parmesan cheese
½ teaspoon ground black pepper
2 grilled chicken breasts, diced (I used Gardein “chicken” cutlets)
1½ cups croutons

Directions:

In a small bowl, stir together the mayonnaise through the Worcestershire sauce.
Toss half of the dressing with the pasta and refrigerate for 30 minutes.
Mix in remaining ingredients including the remaining dressing and serve.
